Asparagus, Hollandaise, Ham, Potatoes - Luxury Pizza

May has arrived - just in time for Labor Day, bright spring weather lures us out into the garden. The first outdoor meal is finally possible! N. wants potato pizza, so we’re having it again. However, the necessary mozzarella is missing, so I improvise with the ingredients for the asparagus dish that was actually planned.

But first it’s time to make the dough: 400 g 630 spelt flour, 1/2 cube of yeast, 1 teaspoon of salt and 250 g water, which I quickly knead by hand to form an elastic dough. It bakes for a while in the oven at 35° while I prepare the other ingredients. I peel 600 g of potatoes and cut them into small cubes, as well as a pound of asparagus. The heads are cut in half lengthways. The potatoes go into a pan and roast for 10 minutes, the asparagus in another pan for 5 minutes. I make a quick, thick hollandaise from 125 g butter, two egg yolks and a dash of white balsamic vinegar. I also cut a few slices of smoked ham (organic, it’s not so salty) into small pieces, as well as a few slices of ham and mild goat’s cheese. Everything is then placed in small bowls on the kitchen table, as are the spices: Pepper, salt, marjoram, tarragon, homemade wild garlic salt.

The dough has turned out well, I can now roll it out and place it on a greased baking tray. The dough is carefully marked in quarters to avoid any territorial disputes later on. Then everyone in the gang can fill their quarter with the ingredients of their choice. For the adults, it’s a combination of potato, asparagus. Ham, hollandaise and goat’s cheese is the most satisfying combination for the adults, while the children prefer the whole thing cheese-free and prefer just the ham.

The lined tray is placed in the oven at 200° pizza setting (or top/bottom heat, no convection) on the second shelf from the bottom and baked for just under 20 minutes. By then the cheese will have melted, the hollandaise will still be a little runny and the flavors will have combined perfectly. Luxury pizza!
